Winter Gas Load Shedding: How to Maintain Frying Temperatures with Low Sui Gas Pressure

Winter Gas Load Shedding: How to Maintain Frying Temperatures with Low Sui Gas Pressure

There's a specific kind of dread that sets in around November when the flame under your fryer goes from a confident blue roar to a weak, lazy flicker right as your evening rush starts. Every kitchen running on Sui gas in Pakistan knows this feeling, and a double cylinder stainless steel gas fryer, even a well built one with a proper low pressure valve, still can't produce heat the gas line isn't delivering.

This guide walks through why winter load shedding hits frying temperatures so hard, the practical habits that help you get through a low pressure window without ruining a batch, and when it genuinely makes more sense to stop fighting the gas line altogether.

Why Low Gas Pressure Ruins Your Frying Temperature

Dropping gas pressure doesn't just make a smaller flame, it changes the entire combustion process happening under your fryer.

Engineer Fix explains that when pressure drops, less fuel reaches the burner, which throws off the fuel to air ratio the burner was designed around. The flame turns weak, lazy, and yellow or orange instead of a firm blue, which signals incomplete combustion rather than just a smaller version of a normal flame.

That incomplete combustion is exactly why oil temperature struggles to hold steady even when your thermostat dial hasn't moved. The burner simply isn't generating the heat output the dial assumes it is.

How Winter Load Shedding Actually Affects Sui Gas Supply

Understanding the pattern behind the pressure drop helps you plan around it rather than just reacting to it every time.

Pakistan's gas utilities run scheduled supply windows through the winter months specifically because residential heating demand spikes faster than the pipeline network can handle. The Express Tribune reported that SNGPL's winter schedule for Punjab and KP, covering December through February, has previously supplied gas in three daily windows: 5:30am to 8:30am, 11:30am to 1:00pm, and 5:30pm to 8:30pm, with industrial consumers exempt from the cuts.

Commercial kitchens usually fall outside both the protected industrial category and the officially scheduled residential slots, which means your actual pressure can be weakest right when a lunch or dinner rush needs it most. The exact timings shift year to year based on supply and weather, so it's worth checking current notices from your regional gas company rather than assuming last winter's schedule still applies.

The human cost of this is real and well documented. Al Jazeera's reporting on Pakistan's fuel crisis describes a home based chef in Karachi who has to start cooking earlier simply to work around gas timings, and who sometimes cancels orders outright because switching to an LPG cylinder during a shortage makes the order barely worth fulfilling.

Signs Your Burner Is Running on Low Pressure

Catching the problem early saves a batch of food rather than discovering it halfway through frying.

  • A flame that's yellow or orange instead of blue, often lower and lazier than normal
  • Oil that never quite reaches its target temperature, even after your usual preheat time
  • A noticeably slower recovery after food drops into the fryer, with the temperature staying depressed longer than usual
  • A faint gas smell or soot buildup around the burner, both signs of incomplete combustion worth reporting rather than ignoring

A separate oil thermometer is worth keeping at the station specifically for days like this, since a thermostat dial reads the setting you chose, not the actual temperature the weakened flame is managing to produce.

Practical Fixes While You're Still on Gas

None of these fully solve a genuine pressure shortage, but each one buys you real performance during a weak window.

  1. Preheat fully during a confirmed higher pressure slot, then hold that oil covered and ready rather than trying to bring it up to temperature from cold once pressure has already dropped.
  2. Run one burner at a time instead of several at once. Every additional open burner splits an already reduced gas volume further, so staggering stations can keep at least one running at a usable temperature.
  3. Drop smaller batches more frequently rather than one large batch. A big cold load demands more recovery heat than a weak flame can supply, while a smaller batch lets the oil hold closer to target.
  4. Keep a backup LPG cylinder with the correct regulator on hand. Many gas fryers, including ours, ship with a low pressure valve rated for roughly 0.6 to 1.2 bar specifically because LPG cylinder backup is such a common winter workaround in Pakistan.
  5. Report sustained low pressure to your gas company rather than assuming it's just scheduled load shedding. A genuine supply fault outside the announced windows is worth a formal complaint.

LPG cylinder backup isn't free, so it's worth knowing the real cost before you commit to it as your main winter strategy. The Nation reported that the OGRA notified LPG price rose to roughly Rs 279 per kilogram in October 2026, which puts a standard 11.8kg domestic cylinder at close to Rs 3,300 and a larger 45.4kg commercial cylinder well above Rs 12,000.

When to Switch to an Electric Backup Fryer

At some point, the math stops favoring a fight with the gas line, especially if your busiest hours consistently overlap with the weakest pressure windows.

An electric deep fryer sidesteps the entire problem, since its heating element draws from your electrical circuit rather than a gas main that's partially shut off by design every winter. A 12L electric deep fryer with adjustable 60°C to 200°C temperature control holds its set temperature regardless of what's happening on the gas network outside, and its dual basket setup lets you keep running two items at once the way a gas station normally would.

This isn't a perfect fix either. Pakistan's electricity supply has its own load shedding patterns, so an electric fryer only genuinely solves the problem if it's paired with a stable circuit or a UPS sized for its draw. Swapping one point of failure for another isn't progress, it just moves the risk.

For a smaller kitchen or a single station testing this approach before committing further, a single 6L electric deep fryer is a lower cost way to keep at least one fry station live through a gas outage without the larger investment.

Building a Dual Fuel Setup for Winter

The most resilient kitchens we've seen through a few winters now don't pick a side between gas and electric, they run both.

Keeping one gas fryer and one electric fryer active side by side means whichever utility is actually delivering at that hour keeps your kitchen serving customers. We covered this same logic in more depth for flat top cooking surfaces in our guide to electric hotplates versus gas flat top griddles, where the installation tradeoffs and local reliability questions play out almost identically to what you're weighing here with your fryer line.

A dual fuel setup costs more upfront than committing to one utility. For a kitchen that can't afford a dead fry station during peak hours five months a year, it tends to pay that difference back quickly.

Frequently Asked Questions

Does winter load shedding affect commercial kitchens the same way it affects homes?

Not exactly. Published schedules usually target residential consumers specifically, while industrial users are often exempt, which leaves commercial kitchens in an unclear middle ground that can see pressure drops outside the officially announced windows. It's worth checking directly with your regional gas company about commercial specific guidance rather than assuming the residential schedule applies to you.

Can I boost gas pressure at my shop myself?

No. Pressure and regulator adjustments on a gas line should only be handled by a certified technician, since an incorrect adjustment creates a real safety risk. If pressure seems unusually low outside scheduled hours, the right step is reporting it to your gas company rather than attempting a fix yourself.

Is it safe to switch between gas and electric fryers during the same shift?

Yes, running both side by side is a common and safe approach, as long as each appliance is installed correctly on its own gas line or electrical circuit. The two systems operate independently, so using one while the other is down doesn't create any added risk.

Is an LPG cylinder or an electric fryer the cheaper backup option?

It depends on your usage and current LPG prices, which fluctuate monthly based on OGRA notifications. An LPG cylinder has a lower upfront cost but an ongoing per use expense, while an electric fryer costs more initially but only draws electricity you're likely already paying for regardless.

Winter gas pressure isn't something any single kitchen can fix on its own, but it is something you can plan around. Between smarter preheating habits, a genuine backup fuel source, and knowing the real warning signs of a weak flame, your fryer doesn't have to be the thing that falls apart the moment the temperature drops.
